Tomatoes & spinach with chickpeas
I love simple dishes. I even think the simpler the better, pretty much with everything. Maybe except Gucci’s latest collections.
Sometime this is all you need – couple of ingredients, exotic spices and voila – great meal full of flavour is born. So here it is – my biggest discovery this summer – Tomatoes with chickpeas and spinach. This delicious vegan dish is so easy to make and takes less time and effort that you could imagine.
What you need:
- 1 can of chickpeas
- canned chopped tomatoes ( or around 5 fresh ones)
- spinach and a clove of garlic
- spices: garam masala( 3/4 tsp), cinnamon (1/2 tsp) and ground coriander (1/4 tsp)
What you do:
Garlic and spices go first into the wok, then chickpeas and tomatoes. Let them simmer for 20 minutes and season to taste. In the meantime you can cook rice ( 10mins) or set couscous aside to be ready. Voila! Easy- peasy! That’s it. You blink and it’s ready. Magic people! Perfect vegan mid-week dish for the whole family.
