Carrot & Tomato soup with Mandarin flavour

Often when I cook, I’m driven by a need for something, a craving. This time I was craving orange colour. That’s it. It had to be sunny orange, full of energy and zest. I’ve searched through my pantry and found perfect ingredients for a soup – my go to dish to cook, when I’m stuck or need some pick-me-up lunch/dinner.  It is also to have them vegan. Usually soups are great vegan options. So I got my carrots, plum tomatoes and red onion. Thought it would be great to add some orange juice to it… but I didn’t have any oranges at hand. Instead I tried a mandarine. And yes, it was a good move.

 

Delicious and super easy carrot, tomato and mandarin soup! It’s light and full of flavours and aromas. My little ones love it!

Recipe for the sunny soup:

What you need:
– 6 carrots – 1 tin of canned plum tomatoes – 1 red onion
– juice from 4 mandarins or 1 orange – olive oil – salt and pepper

What you need to do:

Chop and sauté the onion in a pan with 1 tbs of oil. Add chopped carrots and simmer for about 5-8minutes under cover. Mix well to ensure nothing is sticking and burning. Add the tomatoes and mix well. Let it simmer for another 15minutes until the carrots are soft. Add the juice and warm it up. Season to taste. Sprinkle with chilli flakes if you like. Enjoy!

This is the real feel-good and light vegan soup recipe. The fresh mandarine aroma has a great uplifting effect. Try it when you need some deliciousness.
