Courgette & cauliflower flan is a Sunday Winner Dinner

Delicious courgette & cauliflower flan which we had for our Sunday dinner. It’s always a big hit – my little ones love it! Takes some time to make but most of it (~40mins) it’s the baking time in the oven. Which is great!

 

  

My recipe below 👇😊:

What you need:
– 2 courgettes
– half of cauliflower – tub of creme fresh
– 5 eggs – 2 shallots – 1 tbs olive of oil – 50g grated cheddar cheese
– salt, peeper

What you need to do:

Boil the courgettes and cauliflower for 15 mins. Dice the shallots and sauté them in the oil on the frying pan for 2-3 minutes. Once cooked – cut the courgettes into small slices and cut the cauliflower into pieces. In a separate bowl mix the eggs with creme fresh, shallots and season. Don’t overmix. In a baking dish arrange a layer of courgette and cauliflower and pour a bit of the mixture to cover them. Next put another layer of veggies and cover with mixture. Repeat until the mixture is finished. Sprinkle the cheese at the top and put into oven for 35-45 mins at 170 degrees. Let if cool a bit and serve with salad and homemade chutney if you like. Voila!
